Breadless Panzanella

2 large cumbers- peeled, seeded and jullienne
1 large red onion- jullienne
4 roma tomatoes- quartered (or use your favorite tomato)
1/4 c capers
1/4 calamata olives- halved
1 c garlic oil (cook 4-5 cloves of garlic in oil over med-high heat until garlic is brown)
1/2 red wine vinegar salt and pepper to taste
Mix 'em all together
Eat!
