1 large onion chopped
garlic (as much as you like), chopped
olive oil
1 large can tomato sauce
3 cans chicken broth
1 large bag frozen corn
salt & pepper
cumin to taste
1 bunch cilantro chopped, or 1 tbs. dried
Saute onion and garlic in olive oil until onion is soft and translucent. Add the rest of the ingredients and bring to a boil making sure to stir often so it won't stick. Lower heat to low and let simmer for a couple of hours. I usually use about 5 cloves garlic and a HUGE amount of cumin. Crumble up tortilla chips in it, add a little dollop of sour cream and cheese.
