Beef Stroganoff



CROCK POT BEEF STROGANOFF

3 lb. beef round steak, 1/2 inch thick
1/2 c. flour
2 tsp. salt
1/8 tsp. pepper
1/2 tsp. dry mustard
2 med. onions, thinly sliced and separated into rings
2 (4 oz. each) cans sliced mushrooms, drained or 1/2 lb. mushrooms, sliced
1 (10 1/2 oz.) can condensed beef broth
1/4 c. dry white wine (optional)
1 1/2 c. sour cream
1/4 c. flour
Trim all excess fat from steak and cut meat into 3 inch strips about 1/2 inch wide. Combine 1/2 cup flour, the salt, pepper and dry mustard; toss with steak strips to coat thoroughly. Place coated steak strips in crock pot; stir in onion rings and mushrooms. Add beef broth and wine; stir well. Cover and cook on low setting for 8-10 hours. Before serving, combine sour cream with 1/4 cup flour; stir into crock pot. Serve stroganoff over rice or noodles.

Julie's Lower Sodium Crock Pot Chili

1 bell pepper - chopped
1 onion - chopped
4 or 5 cloves chopped garlic (or minced from a jar!)

1 pound ground beef

2 cans chili hot beans
1 can red kidney beans (RINSED)
1 can kidney beans (RINSED)
1 can no salt added diced tomatoes
1 can tomatoes w/chilies

1 package lower sodium chili seasoning
cumin

fritos (optional)
cheddar cheese (optional)

In a large skillet, sautee bell pepper, onion and garlic.
When that's finished, put the sauteed mixture in the crock pot.

Brown ground beef and add in 1/2 of the seasoning packet.

While that's browning, empty contents of canned items into the crock pot. Be sure to rinse the 2 cans of kidney beans (do not rinse the hot beans).

After beef is finished cooking, pour it in to the crock pot with the other ingredients. Add in some cumin. (I think the seasoning mix is short on cumin :o)

Cook on low for a few hours till it's all warmed through.

We love it over fritos and topped with shredded cheddar cheese!

BBQ Pork Chops

Ingredients:

Frozen (or thawed) pork chops
Bottle of your favorite BBQ sauce

Put these 2 things in the crock pot while you're fixing the kids' lunches and you'll have tender and juicy fall off the fork chops by dinnertime!

Italian Beef Sandwiches (Crockpot)

THIS IS SO EASY AND DELICIOUS!

INGREDIENT LIST:
2 pkgs Thinly sliced beef - or - a roast (the thin sliced beef is so inexpensive, though!)
1 pkg onion soup mix
1 bottle of pepperoncini (with the juice)
1 onion - chopped
1 green bell pepper chopped

Hoagie Rolls
butter
Provoline cheese

Put top 5 ingredients in the crockpot at about 10am. (Meat does not even have to be thawed!)
Let it simmer all day


Around dinnertime, put some butter in a skillet and toast the hoagie rolls, spoon some the the beef and veggies onto the buns and slap a piece of cheese on it!

These are a hit, even with the kids!

CROCK POT PIZZA

CROCK POT PIZZA
1 pkg. (12 oz.) kluski noodles
1 1/2 lbs. ground beef
1 med. onion, chopped
1 jar (16 oz.) pizza sauce
1 jar (8 oz.) spaghetti sauce
Mushroom & green pepper (opt.)
8 oz. cheddar cheese, shredded
8 oz. Mozzarella cheese, shredded
1 pkg. pepperoni, sliced
Cook and drain noodles. Brown ground beef and onions. Drain off fat. Add the sauces and optional ingredients to the meat and simmer well. Layer, twice: noodles, meat sauce, cheddar cheese, Mozzarella cheese and pepperoni.

Turn crock-pot on low and serve when the cheese is melted, or set on high for approximately 30 minutes. Or layer in a 9 x 13 inch baking pan and bake in 350 degree oven for 20 minutes or until cheese is melted. Serves 12.

White Chicken Chili

From the Bush's Beans Website:
 
3 tablespoons olive oil
1 medium onion, finely chopped
1 can (4-ounces) chopped green chilies, drained
3 tablespoons all-purpose flour
2 teaspoons ground cumin
2 cans (16 ounces) BUSH'S BEST Great Northern Beans
1 can (14.5 ounces) chicken broth
1 ½ cups finely chopped cooked chicken breast
Shredded Monterey Jack cheese (optional)
Sour cream (optional)
Salsa (optional)

In large skillet, cook onion in oil for 4 minutes or until transparent. Add chilies, flour and cumin; cook and stir for 2 minutes. Add beans and chicken broth; bring to a boil. Reduce heat; simmer for 10 minutes or until thickened. Add chicken; cook until hot.

Garnish with cheese, sour cream and salsa, if desired.

Slow Cooker Chicken with Mushroom Wine Sauce

Slow Cooker Chicken with Mushroom Wine Sauce

Prep Time: approx. 10 Minutes.

Cook Time: approx. 6 Hours

Makes 4 servings.

1 (10.75 ounce) can condensed cream of mushroom soup
1 teaspoon dried minced onion
1 teaspoon dried parsley
1/4 cup white wine
1/4 teaspoon garlic powder
1 tablespoon milk
1 (4 ounce) can mushroom pieces, drained
salt and pepper to taste
4 boneless, skinless chicken breast halves

Directions
In a slow cooker, mix together the soup, onion, parsley, wine, garlic powder, milk, and mushroom pieces.

Season with salt and pepper.

Place chicken in the slow cooker,covering with the soup mixture.

Cook on Low setting for 5 to 6 hours, or on High setting for 3 to 4 hours.

Some excellent crockpot black beans

Black Beans & Rice

INGREDIENTS

1 lb. dry black beans
1 big onion and several cloves garlic chopped fine and sautéed until soft
A few carrots, a big bell pepper, and a few stalks of celery chopped and sautéed for a minute or so
salt and pepper
oregano and basil
cumin
Cider vinegar, about 1/2 cup

Put everything but the vinegar in the crockpot and add water to cover. I cooked on high about 10 hours. Add the vinegar about 30 min. before serving.

Serve over rice and with Cheese Quesadillias
(CHEESE, TORTILLAS)

Cilantro
Garlic

Crockpot Chicken & Mushrooms in White Wine Cream Sauce

Crockpot Chicken & Mushrooms in White Wine (Alter ingredients to serve more - this feeds me, Bruce and Abby)


*I bet you could do this with a whole chicken in the crockpot, too!


3 frozen chicken breasts
Fresh Chopped Parsley (I use about half of the bunch I get from Kroger)
Package of fresh Mushrooms - sliced (whole would work, too)
1 can reduced sodium cream of mushroom soup
heaping spoonful of chopped garlic (I keep a huge jar in the fridge - pre minced from Kroger)
1 small onion - sliced thin
salt and pepper to taste
Put chicken in crockpot - (Can be put in totally frozen!)
Add mushroom soup and then all other ingredients - You don't even have to stir it yet!
Cover and cook on low or high depending on how much time you have before dinner! Stir occasionally (or not! you can't mess things up in the crock pot!!!)
I'm serving this tonight with wheat "egg" noodles but brown rice is also good :o)
