Baked Whole Chicken

INGREDIENTS:
1 whole chicken, thoroughly rinsed
salt and pepper to taste
1 small onion, quartered
1/2 cup fresh oregano or other fresh herb(s)
1/2 med lemon
1 clove garlic
vegetable oil

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
Stuff poor unsuspecting bird with the onion, herb(s), garlic, and lastly the lemon, sealing up the cavity with it as much as possible, rind out. Liberally rub chicken with veggie oil. Season chicken with salt and pepper to taste, if desired. Place in a 9x13 inch baking dish or roasting dish. Loosely cover with tin foil, but do not seal into pan. Bake for 2 to 2 1/2 hours or until chicken is cooked through and juices run clear. Cooking time will vary a bit depending on the size of the bird. (I usually just use the cooking times/temps listed on the packaging of the bird.)
