Quick Quesdillas

Quick Quesdillas
Christy Says: "this is my standby for when I don't have much time"
tortillas - about 12
queso cheese, shredded - about 1.5 pounds
1 bell pepper (any color) - chopped
1 onion - chopped
2 cloves garlic - chopped
Sauté vegetables in olive oil until tender.
Put tortillas in skillet on medium heat, fill one side with cheese and vegetables, fold over and cook until cheese is melted.
