Slightly Sweet But Simple Bread (adapted from breadbeckers)

2 cups hot water
1/4 cup oil (1/3 c. if using egg)
1/4 cup honey (may use 1/8 cup)*
1 3/4 tsp. instant yeast
1 egg (optional)
2.5 cups freshly milled flour
1tsp. salt
1/2 - 1 Tbs. lecithin (optional)
1/4 tsp. gluten (optional)
Combine water, oil, and honey.
Add in *half* of the flour, yeast, salt, lecithin, and gluten.
Mix thoroughly.
Add the remaining flour and knead until smooth and elastic (about 10 min.).
Let rise until double. Shape into loaves or rolls or use any combination of the YEAST BREAD AND ROLL VARIATIONS. Place in greased pans, and let rise again.
For loaves, bake at 350F about 30 min.
