Cherry Snowball Cookies

These have become our yearly cookie. Fun for kids to help with!

1 c butter softened
1/2 c confectioners sugar (plus more to roll cookies in)
2 c all purpose flour
1 6 oz jar maraschino cherries (no stems - drained and halved)

In bowl, cream butter & confectioners sugar. Gradually add flour. Shape a tablespoon of dough around each cherry, forming a ball. Place 1 inch apart on ungreased baking sheets. Bake @ 325 for 18 to 20 minutes or until the bottoms are browned. Roll warm cookies in confectioners sugar. Cool on wire racks. Yields 2.5 dozen.
