Superfast Salisbury Steak



Superfast Salisbury Steak

I chose this because it really is quick, easy and good. We use ground beef, but it's just as good with ground turkey.

Shopping list:


1 1/2 lbs. ground beef or ground turkey breast
1/3 cup dry bread crumbs
egg whites
cooking spray
tomato paste (small can)
Worcestershire sauce
black pepper
1-10 1/2 oz. can condensed french onion soup

Optional for roasted asparagus side dish:
2 lbs. fresh asparagus, trimmed
1/2 cup butter
2-4 green onions, chopped
salt

DIRECTIONS
1. Mix ground beef or ground turkey, breadcrumbs and 2 egg whites in a 3-qt. bowl.
2. Preheat a large nonstick skillet coated with cooking spray on medium-high 2 to 3 minutes.
3. Divide meat mixture into 6 equal portions, shaping into 1/2 inch thick patties. Wash hands. Add patties to pan, and cook 3 minutes on each side.
4. Remove patties from pan; keep warm.
5. Add to skillet: 3/4 cup water, tomato paste, 1 1/2 tsp. worcestershire sauce, 1/2 tsp black pepper and soup; stir. Bring to a boil; add patties, reduce heat. Cover and simmer 10 minutes.
6. Uncover and cook unit reduced to 3/4 cup.



Optional roasted asparagus side dish:


Place asparagus in a shallow baking dish coated with nonstick cooking spray. Combine the melted butter and green onions; spoon over asparagus. Sprinkle with salt. Bake, uncovered, at 425 degrees for 10-15 minutes or until lightly browned.


Optional Green Beans Side Dish


balsamic green beans - super easy - just buy the pre trimmed ones in the bag, scoop out tons of garlic from the jar add balsamic vinegar & olive oil - nuke for 5 minutes!
